SABO is the flagship dining destination within the Selman Marrakech palace, conceived by multi-Michelin-starred chef Jean-François Piège and designed by Jacques Garcia in a Moroccan Belle Époque style. An open-roof retractable patio reveals the night sky while guests enjoy tableside flambéed Oualidia prawns, croque-monsieur with caviar, and wood-fired sea bass. Opened in 2025 with its own kitchen, private entrance, and dedicated reservations. Fine-dining price levels — expect 1,200–2,000 MAD per person before wine.
