Plus 61 — named after Australia's international dialling code — was founded by Cassandra Karinsky, Sebastian de Gzell, and Chef Andrew Cibej to bring relaxed Sydney-style dining to Guéliz. The kitchen weaves Australian produce philosophy with Moroccan and Mediterranean technique, making bread, pasta, cheese, and yoghurt in-house and partnering with local bio-organic farmers. Share-style plates such as chargrilled octopus with chimichurri, squid ink tagliatelle, and braised beef rib anchor a seasonal menu complemented by natural wines and a stellar cocktail list.
